Ingredients

🍖The Burger Patties:

1.5 lbs (680g) ground lamb (80/20 lean-to-fat ratio recommended)

3 cloves garlic, minced

2 tbsp fresh mint, finely chopped

1 tsp ground cumin

1 tsp smoked paprika

1 tsp kosher salt

1/2 tsp freshly cracked black pepper

🍖For Assembly:

4 brioche burger buns (or lettuce wraps for low-carb)

1 cup fresh arugula (or baby spinach)

1 medium tomato, sliced

1/4 cup Greek yogurt (or tzatziki sauce)

1 tbsp extra virgin olive oil (for brushing the grill/pan)

Instructions

🟢Mix the Patty Ingredients:

    In a large mixing bowl, combine the ground lamb, minced garlic, chopped mint, ground cumin, smoked paprika, kosher salt, and black pepper. Gently mix with your hands until just combined (do not overmix, or the burgers will become tough).

      Form the Patties:

        Divide the meat mixture into 4 equal portions and shape them into round patties about 1/2-inch thick. Press a slight dimple into the center of each patty with your thumb to prevent them from puffing up too much while cooking.

          🟢Preheat the Pan or Grill:

            Heat a cast-iron skillet or outdoor grill over medium-high heat. Brush lightly with extra virgin olive oil.

              🟢Cook the Burgers:

                Place the lamb patties on the hot surface. Cook undisturbed for 4 to 5 minutes on the first side until a deep crust forms. Flip and cook for another 3 to 4 minutes until cooked to your desired doneness (internal temperature of 160°F / 71°C for well-done, or 135°F / 57°C for medium).

                  🟢Toast & Assemble:

                    Lightly toast the burger buns face-down on the skillet for 1 minute. Spread Greek yogurt or tzatziki on the bottom bun, add the arugula, tomato slice, the cooked lamb patty, and top with the bun. Serve immediately!

                      Notes

                      • Meat Alternative: Replace ground lamb with ground beef (85/15) or ground turkey if you prefer a milder flavor.
                      • Herb Swap: Substitute fresh mint with fresh flat-leaf parsley or cilantro.
                      • Bun Alternative: Replace traditional brioche buns with large lettuce leaves or keto-friendly low-carb buns to significantly reduce the carbohydrate count.
