Ingredients

🍖Chicken Salad Base:

3 cups (450g) cooked chicken breast, shredded or diced

1 cup (150g) seedless red or green grapes, halved

2 stalks celery, finely diced

1/2 cup (60g) pecans or walnuts, toasted and chopped

2 green onions (scallions), thinly sliced

🍖Creamy Dressing:

1/2 cup mayonnaise

1/4 cup plain non-fat Greek yogurt

1 tbsp fresh lemon juice

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp freshly ground black pepper

Instructions

🟢Make the Dressing:

    In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, fresh lemon juice, Dijon mustard, garlic powder, salt, and black pepper until smooth and creamy.

      🟢Combine Ingredients:

        Add the cooked shredded chicken, halved grapes, diced celery, toasted pecans, and sliced green onions into the bowl with the dressing.

          🟢Toss & Coat:

            Gently fold the ingredients together using a spatula until everything is evenly coated in the dressing.

              🟢Chill & Serve:

                Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. Serve cold on a bed of fresh greens, stuffed inside a croissant, or in lettuce wraps.
