1 lb (450g) whole carrots, peeled and cut into 1/2-inch thick coins or diagonal slices
1 tbsp olive oil (or avocado oil)
1/2 tsp garlic powder
1/2 tsp dried parsley (or dried thyme)
1/2 tsp fine sea salt
1/4 tsp freshly ground black pepper
(Optional finish) 1 tsp honey or maple syrup for extra sweetness, or fresh chopped parsley for garnish
Instructions
Prep the Carrots:
Wash, peel, and chop the carrots evenly into 1/2-inch thick slices or sticks so they cook uniformly.
Preheat the Air Fryer:
Preheat your air fryer to 380°F (195°C) for 3 minutes.
Season:
In a medium mixing bowl, toss the sliced carrots with olive oil, garlic powder, dried parsley, salt, and black pepper until every piece is evenly coated.
Air Fry:
Transfer the seasoned carrots into the air fryer basket in a single layer (it's okay if they slightly overlap, but do not overcrowd). Cook at 380°F (195°C) for 12 to 14 minutes.
Shake Halfway:
Pull out the basket and shake it at the 6-minute mark to ensure even roasting and caramelization.
Serve:
Check for doneness with a fork—they should be tender with browned edges. Toss with honey/maple syrup or fresh herbs if desired, and serve warm!
