Ingredients

2 large ripe avocados, pitted and peeled

½ cup unsweetened cocoa powder (or raw cacao powder)

⅓ cup powdered monk fruit sweetener or powdered erythritol (adjust to taste)

(Optional splash: 2–3 tbsp unsweetened almond milk or heavy cream if needed to thin, plus 1 tsp vanilla extract for flavor)

Instructions

🟢Prep the Avocados: Scoop the flesh of the two ripe avocados directly into a food processor or high-speed blender.

    🟢Add Ingredients: Add the unsweetened cocoa powder and powdered low-carb sweetener.

      🟢Blend Until Smooth: Blend on high speed for 1–2 minutes, scraping down the sides of the bowl as needed, until the mixture becomes completely smooth, silky, and uniform with no avocado lumps remaining. (If it's too thick, blend in 1 tablespoon of almond milk or heavy cream at a time).

        🟢Chill & Serve: Spoon the mousse into 4 small dessert ramekins or glasses. Enjoy immediately at room temperature, or chill in the refrigerator for 30 minutes for a firmer, colder texture.

          Notes

          • Powdered Sweetener: Can be substituted with liquid stevia drops (about 10–15 drops to taste) or keto maple syrup.
          • Cocoa Powder: Swap unsweetened Dutch-process cocoa powder for raw cacao powder for an extra antioxidant boost.
          • Avocado Base: If you want a non-avocado alternative, cooked and chilled sweet potato or heavy whipping cream can be substituted (though macros will adjust accordingly).
