Ingredients

🍖Chicken:

1.5 lbs (680g) boneless, skinless chicken breasts (sliced horizontally into 4 thin cutlets)

1/2 tsp salt

1/4 tsp freshly ground black pepper

1/2 tsp garlic powder

1 tbsp olive oil

1 tbsp unsalted butter

🍖Honey Mustard Sauce:

1/4 cup Dijon mustard

3 tbsp honey

2 tbsp whole grain mustard

2 cloves garlic, minced

1/3 cup low-sodium chicken broth

1 tbsp heavy cream (or Greek yogurt, optional for extra richness)

1 tsp fresh thyme leaves (for garnish)

Instructions

🟢Season the Chicken:

    Pat the chicken cutlets dry with paper towels. Season both sides evenly with salt, black pepper, and garlic powder.

      🟢 Sear the Chicken:

        Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Transfer the chicken to a plate and cover loosely to keep warm.

          🟢Make the Sauce:

            Reduce heat to medium. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.

              🟢Simmer & Thickens:

                Whisk in the Dijon mustard, whole grain mustard, and honey. Let the sauce simmer for 2–3 minutes until slightly thickened. Stir in the heavy cream if using.

                  🟢 Combine & Serve:

                    Return the cooked chicken cutlets and any juices back into the skillet. Spoon the sauce over the chicken and simmer for 1 minute to heat through. Garnish with fresh thyme leaves and serve warm over rice, roasted vegetables, or mashed potatoes.
