Ingredients

🍖The Roast:

1 Standing Ribeye Roast (Prime Rib) (approx. 5 to 6 lbs / 2.3 to 2.7 kg, 3–4 bones)

2 tbsp coarse kosher salt

1 tbsp coarsely cracked black pepper

🍖Garlic-Herb Crust:

6 cloves garlic, minced

2 tbsp fresh rosemary, finely chopped

2 tbsp fresh thyme, finely chopped

3 tbsp olive oil (or melted butter)

1 tbsp Dijon mustard

Instructions

🟢Prep & Season:

    Remove the roast from the refrigerator 1 hour before cooking to bring it to room temperature. Pat dry with paper towels. Season generously on all sides with coarse kosher salt and black pepper.

      🟢Make Herb Paste:

        In a small bowl, combine minced garlic, chopped rosemary, thyme, olive oil, and Dijon mustard. Rub the mixture evenly over the entire surface of the roast.

          🟢High-Heat Sear:

            Preheat your oven to 450°F (230°C). Place the roast fat-side up in a large roasting pan (bones resting on the bottom acting as a natural rack). Roast uncovered for 15 minutes to create a deep golden crust.

              🟢Slow Roast:

                Reduce the oven temperature to 325°F (165°C). Continue roasting for 1 hour 45 minutes to 2 hours, or until an internal thermometer inserted into the thickest part reads 120°F (49°C) for medium-rare (it will rise to 130°F while resting).

                  🟢Rest & Serve:

                    Transfer the roast to a carving board, tent loosely with aluminum foil, and let it rest for 20–30 minutes before slicing against the grain to retain all juices.

                      Notes

                      • Beef Cut Swap: Substitute the ribeye roast with a boneless beef tenderloin roast (for a leaner option) or a top sirloin roast.
                      • Herb Crust Variation: Swap fresh rosemary and thyme with fresh oregano and parsley, or use 2 tbsp dry Montreal Steak Seasoning.
                      • Fat Base Swap: Replace olive oil with beef tallow or clarified butter (ghee) for an enhanced rich, buttery flavor crust.
